The Estate: The Dussort estate spans three hectares of Bourgogne Blanc in Meursault, with vineyards divided into around 20 plots. Vine age varies from 15 to over 60 years.
The “Cuvée des Ormes” comes from older vines, ranging from 35 to over 60 years, producing grapes with remarkable depth and complexity.
Sylvain Dussort, from a long lineage of winemakers in Meursault, took over the estate in 1982 with his wife. Over the years, they expanded the estate to 6 hectares, acquiring new vineyards and modernising the winery. They cultivate classic Bourgogne varietals, including Aligoté, Chardonnay, and Pinot Noir. Practicing sustainable viticulture, they use organic fertilisers, environmentally-conscious vine treatments, and natural fermentation during vinification. The estate’s white wines, particularly Chardonnay, thrive in the region’s unique shale and clay soils, while the area closer to Volnay is suited for Pinot Noir.
Winemaking: Harvested by hand, the wine is aged for 12 months in barrels on the lees. The wine is racked off once and assembled in a single vat before bottling. This takes place at between 16 and 18 months.
